The Craft of Hideo Kitaoka
Born in 1950, Hideo Kitaoka is a third-generation blacksmith who learned the craft from his father and grandfather. He is one of the founding members of Takefu Knife Village and stands out as the only smith there who focuses exclusively on traditional single-bevel knives. Using high-carbon steels such as White Steel No.2 and Blue Steel No.2, he forges blades that deliver exceptional sharpness and edge retention, often hardened to 60–63 HRC. Many of his knives feature Damascus or suminagashi cladding, showcasing both strength and beauty.

Each knife is shaped by hand using traditional forging techniques. Kitaoka’s work is known for thick spine geometry, which requires skilled hammer control to form and balance properly. The handles are crafted from premium materials like ebony or pakkawood and are shaped into octagonal wa-style grips. Every detail, from the blade geometry to the handle finish, reflects the precision and care of a true master craftsman.
