Santoku Knife
The Santoku knife (also known as santoku bōchō) is a western style multi-purpose knife from Japan, known for its compact design, short blade, and rounded tip that makes slicing, chopping, and mincing easy and precise. The name “Santoku” means “three virtues,” reflecting its proficiency in slicing, dicing, and mincing.
Santoku typically have a blade length ranging from 165mm to 180mm. Unlike Gyuto or Petty knives, Santoku features a flatter blade edge, allowing for straight-down cuts without the need for a rocking motion. This design is ideal for those who appreciate simplicity, speed, and efficiency in food preparation.
Most Santoku chef’s knives are crafted from high-quality stainless steel or layered Damascus steel, offering excellent edge retention and beautiful wave-like patterns unique to each blade. Some models feature a granton edge with air pockets to reduce food sticking during cutting.
