Kama Usuba Knife
The Kama Usuba is a traditional Japanese vegetable knife distinguished by its curved “Kamagata” or sickle-shaped tip. Originating from the Kansai (Osaka) region, it offers greater versatility than the square-tipped Usuba used in Kanto (Tokyo). The curved tip excels at precision work and decorative cuts, making it a favorite for Kazari-giri techniques.
Like the standard Usuba, it features a tall, single-bevel blade ideal for straight vegetable cuts. It is available in similar blade lengths and functions identically, but with added agility at the tip. The Kama Usuba is especially valued by chefs seeking both precision and traditional craftsmanship in vegetable preparation.
