About Echi Knife
Echi Knife was founded in 2021, sparked by a chance encounter between two passionate young individuals: Hiroshi and Johnny. Their paths crossed at a knife exhibition in Echizen, Japan—a city famed for its centuries-old tradition of exceptional knife craftsmanship.
Hiroshi, a Harvard graduate originally from Echizen, comes from a family deeply rooted in knife-making traditions. Growing up, he witnessed firsthand the extraordinary skills and dedication of veteran blacksmiths in his hometown. However, Hiroshi realized that despite their exceptional quality, these handcrafted knives often reached consumers at unnecessarily inflated prices, due to costly middlemen, marketing markups, and distributor fees.
Meanwhile, Johnny, a young entrepreneur with a deep passion for cooking, had been searching for genuinely superior Japanese knives to fuel his culinary enthusiasm. Johnny quickly became frustrated when he found that quality and pricing on the market often didn't match up.
When Hiroshi and Johnny met at the Echizen exhibition, they instantly bonded over their shared vision: to create an authentic Japanese knife brand that delivers superior handcrafted knives directly from skilled artisans to customers, completely bypassing unnecessary intermediaries and inflated costs. Thus, Echi Knife was born.
At Echi Knife, each knife is meticulously hand-forged by master artisans using premium materials such as VG-10 steel, Blue Steel, and Damascus. We partner directly with renowned blacksmiths across Echizen, carefully inspect each knife in our distribution centers in Japan and the United States, and ensure that every blade meets our strict quality standards before reaching your hands.
